I never used to be a wing person, but for some reason I always feel the urge to make them when football is on.  I am also not really a football person.  You would think that would mean that I would have no interest in making wings and watching football, but for some reason when they are together it just works.  I actually mostly love football parties for the food, to be honest.  I have tried MANY wing recipes and I am always just a little disappointed with them.  That is, until I made these wings.  These Sriracha Brown Sugar Baked Wings.  They are sweet and sticky and spicy and tangy and DELICIOUS.  Your fingers will be covered in sauce and YOU WILL NOT be able to stop yourself from licking it off, I’m telling you.

I picked these babies up at my favorite Fred Meyer, and they were SO GOOD.  I normally buy the “party wings”, which are already cut to separate the drumette and the wing mid section.  This is the first time I bought whole chicken wings and I don’t think I’m ever going back.  I don’t know if these wings were particularly large, but they had more meat on them then I have seen before and after baking they were the most tender and succulent chicken wings I have ever had.  Also I kind of feel like the whole wing is more of a show stopper and will wow and amaze your guests. 🙂

The key to getting crispy baked wings is a simple one.  Bake on a rack so that the fat that renders falls away from the chicken and allows it to crisp up.  I also put them in a cold oven and then turned on the heat.  I don’t really know if that makes a huge difference but it does allow more fat to render.

After getting all brown and crispy in the oven, the wings get dunked in the sriracha brown sugar glaze and then go back in the oven for about ten more minutes.  The glaze is AMAZING.  Seriously.  If you are the kind of person that doesn’t really like sweet and savory things (who are you??), I dare you to still try this.  Despite the fact that brown sugar is in the name, these are not super sweet.  They are the perfect balance really.  A little sweet from the brown sugar.  A little spicy from the sriracha.  A little tangy from the rice vinegar.  And the fish sauce.  If you are afraid of fish sauce, don’t be.  It will give an umami flavor that you can’t get anywhere else, and don’t worry!  It doesn’t taste fishy at all.  Lastly, the ginger gives a fragrant kick.

After baking, brush more glaze on the wings and serve with some glaze on the side as a dipping sauce for those people who like things really saucy.

These Sriracha Brown Sugar Baked Wings are a little sweet, a little spicy and a little tangy. They get amazingly crispy in the oven, then finish with the sriracha brown sugar glaze that is totally mouth-watering and addictive!

Ingredients 

  • 8 whole chicken wings
  • 1/4 cup sriracha
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon fish sauce
  • 1 inch piece of fresh ginger grated (1-2 teaspoons grated)
  • salt
  • pepper

Instructions 

  • Line a baking sheet with foil and top with a baking rack. Place wings on the baking rack and season with salt and pepper.
  • Place in the oven and turn oven on to 400°F. Bake wings for 45-50 minutes or until skin is golden and crisp.
  • Meanwhile, make glaze. In a small saucepan, add sriracha, brown sugar, rice vinegar, fish sauce and ginger Bring to a simmer and whisk until combined and sugar is dissolved. Remove from heat.
  • When wings are done remove from oven and toss the wings with about half of the sauce. Place wings on a lined baking sheet and put back in the oven for about 10 more minutes (watch to make sure they don't burn).
  • Remove wings from oven and brush with more sauce. Serve with remaining sauce on the side for dipping.

Notes

Makes 8 wings. Most people will eat 2-4 wings each.
