This super easy guacamole is totally addictive, takes 5 minutes to make and only has 4 ingredients!

Moving on to this guacamole. You are totally going to want to put alll of this guacamole in your face. With chips. And maybe a margarita? Because it’s Monday. Anyone else having a rough one? I think Mondays are especially tough after you have had a great weekend. It’s like a mini day after Christmas letdown. Yesterday we had a birthday party for Mr. Briar, and we had a few friends over and grilled some burgers. It was a pretty casual thing so I didn’t go crazy and make a bunch of appetizers, even though I looove appetizers. I did, however, whip together some of this super easy guacamole. I don’t know if you guys have noticed yet, but I really like easy recipes. I love to cook, but most of the time I don’t like spending hours and hours on one meal. So I am always looking for ways to make food that is both quick and delicious. I won’t cut corners if it is going to make the food taste meh. But if I can save a few steps? I will.
Enter this guacamole. I’ve been making it like this since college and it requires just a few ingredients, a few minutes, and almost no chopping – which I love! The trick here – and some might call it a cheat – is to add just a little salsa to the guacamole. That eliminates having to chop up tomatoes, onions, and whatever else. I like to use a good quality fresh salsa – Emerald Valley organic salsa is my favorite. Obviously if you use a spicy salsa it will make your guacamole a little spicy, so you can customize to your own tastes. I usually use a medium salsa.
Everyone has their own way to make guacamole, and most people have very strong opinions on what is OK and what is NOT OK in guacamole (remember the New York Times pea guacamole incident?). I like my guacamole with lots of garlic, a little lime juice, and salt. This makes a totally addictive dip that disappears at parties – or you know, on a Tuesday night at my house.
You will love making AND eating this ridiculously easy guacamole. Just throw all the ingredients in a bowl and mash it up with a fork or whisk. I like to leave some nice big hunks of avocado in there. Be careful with the lime juice – once you add too much lime, you can’t go back. If I am making a small batch with only one avocado, I usually just squeeze one small lime wedge into the mix. For this larger batch I used four avocados and I squeezed half of a lime – but I just used my hand to squeeze it so it didn’t extract all the juice. Start with less juice and add more to taste so that you don’t accidentally overdo it.

- 3-4 ripe avocados
- 3 tablespoons fresh salsa
- 2-3 teaspoons fresh lime juice (about half of a lime, lightly squeezed)
- 2 garlic cloves, finely minced or pressed
- salt to taste
- Place all ingredients in a bowl and mash with a fork or whisk until combined and chunky texture is achieved. Add salt to taste.
