I’m so excited to share this Easy Coconut Rice with you today!  I’ve been making this coconut rice for my family for the last few weeks, and let me tell you, it is a huge hit!  My husband has been requesting it several times a week, we just can’t get enough of it!

What I love about this coconut rice is that is is so easy.  It doesn’t really require more work than just making a pot of plain rice.  But it tastes so much better!  This is perfect as a side dish for one of my quick and easy stir fries, such as my Ginger Asparagus Stir Fry or my Peanut Sauce Chicken and Broccoli Bowl.  You could even serve it simply with some steamed broccoli and drizzle my Best Ever Thai Peanut Sauce over it and call it good!

How Do you Make Coconut Rice?

Rinse the rice until the water runs clear.  Add all the ingredients to a pot, stir, and bring to a boil.  Reduce heat to low and simmer for 15-20 minutes, until liquid is absorbed.

Can I use brown rice to make coconut rice?

Yes, you can use brown jasmine rice to make coconut rice. However, the cooking time will be longer.  Follow the package instructions for cooking time.  I also find that the coconut flavor is more subtle when I use brown rice, and stronger when I use white rice.

Ingredients

  • 1 cup white jasmine rice uncooked
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 teaspoon salt
  • 3 slices ginger root
  • 1 cinnamon stick optional

Instructions

  • Rinse the rice until water runs clear.
  • Add all ingredients to a medium saucepan, stir to combine.  Bring to a boil, cover and reduce heat to low. Simmer until liquid is absorbed, 15-20 minutes.
  • Remove the ginger slices and cinnamon stick, fluff rice with a fork and serve.

Notes

Recipe can be made with white or brown jasmine rice.  If using brown jasmine rice, follow cooking time instructions on packaging, as it will take longer than white rice.  The coconut flavor is also more subtle with brown rice and stronger with white rice.

    Hello, I was wondering if you could you ginger seasoning if you don’t have fresh ginger available..?

      Hi! I haven’t tried it but I think it would be fine. I would just use a very small amount as ground ginger can be strong. Maybe just 1/8 tsp. You can also totally leave the ginger out if you prefer.
