Whew, how is everyone recovering from their long weekend?  Those weekends throw me off, what about you?  The weather is warming up again, but the last week has been super rainy and grey here in Seattle.  That was what got me thinking about this lavender latte.  Actually, the idea was first put into my head by my friend Meg who commented on my Lavender Collins that she had been drinking lavender lattes lately.  I’ve been a big fan of making my own syrups for coffee for years, and have several recipes on the blog including Vanilla, Autumn Spice and Gingerbread, so of course I wanted to try this right away!  I already had the syrup on hand from the Lavender Collins so making this was a snap.  And how about that multitasking syrup, huh?  Lavender in the morning, lavender in the evening.

A few notes about this recipe:  I don’t have an espresso machine, so I use an inexpensive Bialetti Moka Pot.  It is a stovetop espresso maker and is one of my favorite ways to make coffee at home.  In order to make the foam for the latte, I do this easy trick:  Pour the milk or half and half into a mason jar, warm up in the microwave for 30 seconds.  Screw on the lid and shake it until foamy (not too long, you don’t want to turn it into butter!).  Be sure to screw the lid on tightly or you might have a milk explosion (it has happened to me).  That is it!  No need to have a crazy expensive espresso machine to enjoy this latte!

Lavender Latte

Ingredients 

For The Lavender Latte:

  • 8 ounces strong coffee
  • 1/4 cup half and half or milk of choice
  • 2 tablespoons lavender syrup recipe below
  • dried lavender for garnish if desired

For The Lavender Syrup:

  • ¼ cup dried lavender
  • ½ cup sugar
  • ½ cup plus 3 tablespoons water

Instructions 

To Make The Lavender Syrup

  • Add 1/2 cup water and 1/4 cup lavender to a sauce pan, bring to a boil. Simmer for about 3 minutes, then remove from heat and allow to steep for 20 minutes. Strain out flowers and discard.
  • In a clean saucepan, add 1/2 cup of sugar and 3 tablespoons water. Bring to a boil, stirring to dissolve sugar. Simmer for 3-4 minutes, then stir in lavender liquid. Whisk until fully combined, remove from heat and allow to cool. Transfer to storage container and keep in the fridge.

To Make The Lavender Latte:

  • Place milk into a microwave safe jar and heat for about 30 seconds, until warm. Tightly screw lid onto jar and shake for a few seconds, until milk is foamy.
  • Place 2 tablespoons of lavender syrup in a mug. Pour hot, strong coffee over syrup. Top with foamy milk. Garnish with dried lavender, if desired.

Notes

*please feel free to adjust amounts of ingredients as needed. Use more or less syrup, milk and coffee to suit your tastes.

    This lavender syrup is amazing! I would love to make it in bulk. Just curious if you think I would need to double the amount of lavender used for stepping? I was going to double the water and sugar amount but just not sure if I would need to double the lavender amount as well. When I made it as is, I only got two cups of coffee out of it. Just curious if that’s what you get as well?

    1. Hi Jennifer – I haven’t doubled this recipe but what I would do is increase the lavender by about one half. Give that a try and see how you like the strength. I worry that doubling it might make it TOO strong. It may depend on your preference as well. Feel free to play with it to find the perfect amount for yourself! I think the amount of syrup used per latte will depend on your personal preference as well. Some people like to use more, some like to use less. So glad you enjoy the recipe!

  2. Hey! Is it necessary to have a stovetop espresso maker? Can you just use a really strong cup of coffee?

    Also where would I find dried lavender for the syrup?

    1. Hi Lisa – Yes, you can absolutely use strong coffee instead! I often just use my french press. As for the lavender, I have found it in the bulk spice section at some stores, also it is often sold in spice stores. You can also order it on Amazon, just search for culinary lavender.

    1. Hi Taylor – I usually keep mine about 2 weeks. It will vary a little bit as anything homemade does. I searched the internet and some sources say simple syrup will last up to 4 weeks, but your results may vary! I hope you love the syrup!

  4. What kind of lavender did you use? A lot of websites say use only lavender that is ok for consumption. I really want to make this! Big fan of lavender lattes 🙂

    1. Hi Margaryta, definitely use culinary lavender! You can find it at some grocery stores, spice stores or online. It’s the best price if you can find it in bulk! I hope you love the latte!

    I was really happy and surprised that this worked for me. I’ve no experience with any barista work whatsoever, and I took a shot at this because I miss the lavender lattes at Bibble and Sip in NYC. I use three teaspoons of the syrup per cup, but I also love strong lavender flavor. Thanks for the recipe.
