Pesto Grilled Shrimp

Ingredients

1 lb shrimp, tails on and shells removed

1/2 cup pesto (I use my homemade pesto, click HERE for recipe)

Instructions

Toss shrimp in pesto, allow to marinade for 15 minutes.

Thread shrimp onto skewers.  Grill over medium-high heat for 1-2 minutes per side.  Shrimp cooks VERY quickly, remove from grill just as it is starting to turn pink.

Notes

Serves 4 as an appetizer, 2 for a main meal.  Depending on the size of your shrimp, 1 pound will be about 18 shrimp.
