Helloooo will you look at those caramelized brussels sprouts?  Brussels sprouts get a bad rap, but luckily they have made a comeback in the last few years.  I always was fascinated by brussels sprouts when I saw them in the grocery store as a kid because they look like tiny cabbages.  I don’t remember my mom ever making them though – probably because she had terrible memories of awful boiled brussels sprouts as a kid!

Well, banish those memories of mushy Brussels sprouts, because I am here to tell you that oven roasted Brussels sprouts are delicious!  And better yet, they are so easy!  Simply baked in the oven with olive oil, salt and pepper, they caramelize and get tender on the inside and crispy on the outside.  I could not stop eating them right off the pan!  They really taste kind of like…wait for it…french fries!  I know, but if you don’t believe me, you need to try this method for cooking Brussels sprouts.

How to make oven roasted Brussels sprouts

  1. Preheat oven to 400 degrees F.
  2. Trim the ends off the Brussels sprouts and cut them in half
  3. Toss with olive oil, salt and pepper.
  4. Arrange on a baking sheet, with all the flat cut sides facing down.  I recommend using a large, heavy baking sheet like this one.
  5. Roast for 35-40 minutes until browned.  Serve immediately.

How to cut Brussels sprouts

The best way to cut brussels sprouts before roasting them is to trim the ends and then cut them in half.  When you arrange them on the pan, put the flat sides down so that it gets nice and browned in the oven.

      Hi Marianne – I haven’t tried it so I’m not sure how they would turn out The only worry I have with frozen instead of fresh is they might turn out mushy or with a different consistency.

    I made these tonight. I baked at 400 for 40 mins. I did place on foil on the cookie sheet. While the flavor was delicious and tops were nice and brown, the inside was very soft and mushy. What did I do wrong? I want to try again.

      Hi Tara – You can try cutting down the cooking time a bit, start checking at 30-35 minutes. I use a sharp knife to check their doneness. If you can easily pierce them with a knife, they are done. Were they fresh or had they been previously frozen?

    I make these often but I add chopped bacon and/or pancetta for added flavor and sprinkle with parmesan cheese. So yummy!
