It’s Friday!  And PSA – Mother’s Day is SUNDAY!  Mother’s Day is a pretty emotionally loaded day for many people.  If you are lucky enough to have your mom in your life, be sure to celebrate her.  If you are lucky enough to BE a mom and have your children here to celebrate you, treasure that. For people who have lost their mothers, or their children – be tender with yourself this weekend.  And that is all the heavy, emotional stuff I will throw at you today. ❤❤❤  Back to these Rosé Raspberry Sorbet Mimosas.

No matter how Mother’s Day makes you feel, you may or may not want a cocktail (or two!).  I had a Sorbet Mimosa when I went out to brunch a few weeks ago and was like “Mind.  Blown.”   I decided to try these Rosé Raspberry Sorbet Mimosas because I love rosé and I love raspberries and I obviously love mimosas.  These would be great drinks to serve at a brunch, bridal shower, baby shower (for the non-pregs, obviously), or girls night.

Not only are these Rosé Raspberry Sorbet Mimosas fun, but they are so easy too!  Seriously, place a scoop of sorbet in a flute, top with champagne – could it get any easier?  I garnished with rosemary, but I think mint would be really great too.  Also you could skip the garnish if you don’t have any fresh herbs on hand.  What is your favorite brunch cocktail?  And how do you plan on taking care of your mom – or yourself – on Mother’s Day?

Ingredients

  • 1 bottle Rosé Champagne/sparkling wine
  • 1 pint raspberry sorbet
  • fresh herbs for garnish such as rosemary or mint (optional)

Instructions

  • To make one drink: Place one small scoop of sorbet into a champagne flute, top with champagne.  Garnish with herbs if using.  Serve immediately.

    What fun! There’s an Italian cocktail called Sgroppino (sp?) that uses lemon sorbet, but I’ve never thought to play with other sorbets! Brilliant.

      Hi Mimi – Oh, I’ve never heard of that, but it sounds great! I think this would work with most flavors of sorbet. It would be fun to experiment with different flavors!

    can you make this a large quantity as opposed to individual drinks…ie: punch bowl

      Hi Moe,
      You could, but the sorbet melts pretty quickly. So if you want the sorbet to actually be floating in the drink it is best to serve individually as people are about to consume them. You could always pre-scoop the sorbet and keep the scoops in the freezer to make serving faster and easier.
