Shrimp Scampi with White Wine




Yield 4 servings


2 Tablespoons Olive Oil

3 Tablespoons Butter

4 garlic cloves, minced

1/2 shallot, minced

3/4 cup white wine

3/4 teaspoon kosher salt

1/8 teaspoon red pepper flakes, or to taste

fresh ground pepper, to taste

2 lbs large shrimp, peeled

1/2 cup chopped fresh parsley

2 tablespoons lemon juice


  1. Heat a large skillet over medium high heat.
  2. Melt the butter with the olive oil in the pan.
  3. Add the shallots and cook until starting to soften, 2-3 minutes. Reduce heat to medium. Add the garlic and saute for about 30 seconds, until garlic is fragrant.
  4. Add the wine, salt, red pepper flakes and black pepper and bring to a simmer. Let wine reduce by half, about 4 -5 minutes.
  5. Add the shrimp and saute for 2-4 minutes, until pink and cooked through. Remove from heat and stir in parsley and lemon juice.
  6. Serve over pasta, rice, or with crusty bread.
