There is something about popsicles on a hot day that can’t be beat.  I like ice cream as much as the next girl, but on a reaalllly hot day, only a popsicle will do.  Maybe it is the kid in me that remembers what a treat they were as a kid.  Sugary treats were a rare occurence in my childhood.  My mom and friends moms were the healthy types, the ones who would try to pass off frozen orange juice as popsicles – and it usually worked.

These Strawberry Lime Popsicles are easy to make and require only three ingredients! Whip up this simple recipe and have a cool treat on a hot day.

The funny thing is that these popsicles are slightly fancied up versions of the orange juice popsicles my mom made me as a kid.  Some blended strawberries, some lime soda or limeade and then the hardest part – waiting for them to freeze.  I ended up using the Simple Truth Organic Coconut Lime Italian Soda from Fred Meyer.  I don’t normally drink soda but it made a great base for a simple popsicle.  The subtle coconut flavor complimented the lime and strawberry perfectly.

A few tips for making these Strawberry Lime Popsicles:

  • I added a tablespoon of sugar to the strawberry puree – you might want to add less or more, depending on your tastes and how sweet the fruit already is.
  • You are going to need a popsicle mold for this
  • Be sure to leave enough space at the top of the mold because the liquid will expand in the freezer – especially if you use a carbonated italian soda.
  • I liked the ombre effect of leaving the strawberry puree at the bottom and topping with the lime italian soda, but if you prefer a more cohesive popsicle, give it a gentle stir before freezing.

Ingredients

  • 1 pint strawberries hulled and quartered (about 1 and a half cups after they have been cut up)
  • 1 tablespoon granulated sugar
  • 2 cups lime Italian soda or limeade I used Simple Truth Coconut Lime Italian Soda

Instructions

  • Place strawberries and sugar in a blender and puree until smooth.
  • Pour strawberry puree evenly between popsicle molds. Top with Limeade or Lime Italian Soda. Leave about half an inch of space at the top to make room for expansion in the freezer. Insert popsicle sticks and freeze until solid.
  • After removing from popsicle molds, extra popsicles can be wrapped in plastic wrap and stored in a freezer bag in the freezer.

    I am totally loving these popsicles Meghan, so fruity and yummy! I love that you used a lime flavoured coconut soda too.
    Ice cream is my all time favourite treat, but I have to agree – when it’s sweltering out, only a popsicle will do. And Homemade is sooooo so much better!

    These look perfect. And I love how you can customise them with more or less sugar to taste and by simply stirring the mixture up, though I think the ombre effect is fantastic. There is something about the freshness of a straight popsicle on a very hot day – they are incredibly refreshing.

    I grew up in a healthy household as well Meghan. As a matter of fact, when I was in college all my friends were receiving care packages brimming with cookies, candy, and chocolate. Do you know what was in my care package? Raisins and sugar free applesauce. Ha! Ha! But to this day . .I tend to go more the healthy route versus junk food. And because of this I would reach for a frozen fruit bar over a bowl of ice cream any day. These popsicles look fantastic. I love the little squeeze of lime to give them extra va-va-va-voom

    I love the ombre effect on these. I usually cool off with store bought fudgesicles, but I think this will have to be the year that I finally cave and buy a popsicle mold. And when I do, I’m absolutely making these.
