Easy One Pot Sausage and Rice Skillet

Ingredients

al fresco roasted garlic fully cooked chicken sausages
sliced

Olive oil
divided

red bell pepper
diced

green bell pepper

onion
diced

garlic cloves
minced

tomato paste

tsp
smoked paprika

tsp
turmeric

tsp
dried oregano

red pepper flakes

uncooked white jasmine rice

cups
low sodium chicken stock

kosher salt
more or less to taste

fresh parsley
chopped (optional)
Instructions
Add 1 tbsp olive oil to a large saucepan over medium heat.
Add sausage slices and brown, 2-3 minutes per side. Remove from pan.
Add remaining 1 tbsp olive oil to pan.
Add onion and bell peppers, season with salt and pepper. Sauté until soft 5-8 mins.
Add tomato paste, garlic, spices and kosher salt. Stir to combine, 30-60 seconds.
Add rice and stir to combine. Pour in chicken stock and return sausages to pan.
Bring to simmer, then reduce to low heat and cover. Cook for 20-25 minutes, until liquid has evaporated and rice is cooked.
Garnish with fresh chopped parsley if desired, serve.
