Whisk together ingredients for dressing, set aside.
Wash and prepare all fruit. Right before serving, add to a large bowl and pour dressing over fruit. gently toss to combine, garnish with fresh mint.
Notes
To make ahead - do not combine dressing with fruit until just before serving. Wash and cut fruit as close to serving time as possible. For leftovers - store tightly covered in the fridge for up to 2 days. Fresh fruit is best. Do not use canned or frozen.
