This easy coconut rice is rich, aromatic and delicious! Jasmine rice is mixed with coconut milk and a few aromatics to create the perfect side dish for stir fries, curries and more!
Add all ingredients to a medium saucepan, stir to combine. Bring to a boil, cover and reduce heat to low. Simmer until liquid is absorbed, 15-20 minutes.
Remove the ginger slices and cinnamon stick, fluff rice with a fork and serve.
Notes
Recipe can be made with white or brown jasmine rice. If using brown jasmine rice, follow cooking time instructions on packaging, as it will take longer than white rice. The coconut flavor is also more subtle with brown rice and stronger with white rice.
