2ouncesfresh whole milk mozzarella*cut or torn into bite sized pieces
1cupfresh basilleaves left whole
2ouncesprosciutto
For The Dressing:
1tablespoonolive oil
1tablespoonbalsamic vinegar
1/4teaspoondried oregano
saltto taste
pepperto taste
Instructions
In a large bowl, whisk together the dressing ingredients until combined and smooth.
Add the mixed greens and basil leaves to the bowl and toss in the dressing until fully coated
Add the plum slices and mozzarella, and toss just a little to get some dressing on them.
Tear the prosciutto into a few large pieces and arrange on the salad.
Drizzle a little more balsamic vinegar over the salad, season with more salt (use a coarse salt) and pepper.
Notes
* I used the small "ciliegine" fresh mozzarella balls and just cut them in half. Be sure if you use mozzarella in water to blot it with a towel to remove the excess moisture. You can also use any size, and just cut or tear it into smaller pieces.This serves two, but the ingredients can easily be adjusted for any number of people. Aim for 1 plum, 1 oz of cheese, 1 oz of prosciutto for each person, or more if you wish.Because there are so few ingredients, be sure to use the highest quality that you can!
