Did you know July is National Ice Cream month?  I’m never one to miss a food holiday, especially if it involves ice cream.  So here I am to share a fun and easy way to enjoy your favorite ice cream – BROWNIE WAFFLE ICE CREAM SANDWICHES!  Heck yes.  Speaking of your favorite ice cream, did you know that O Organics®  has new ice cream flavors?

I am loving the O Organics Ice Cream.  They use premium ingredients and are USDA certified organic. I picked up a few of the new flavors at my local Safeway – including Caramel Sea Salt, which is to die for.  Then I grabbed a box of brownie mix – yes I did!  This recipe is that easy!  It is summertime, and there is no reason to be roasting away in a hot kitchen.  You can make these easy ice cream sandwiches without ever turning on your oven.


The genius here is the waffle iron!  You make a batch of brownie mix, then use your waffle iron to make brownie waffles.  Smush some O Organics ice cream between two waffle brownies, then if you want to make it extra fancy, dip the edges in sprinkles, chocolate chips, nuts, or whatever else strikes your fancy.

BROWNIE WAFFLE ICE CREAM SANDWICHES

Brownie Waffle Ice Cream Sandwiches!  Smooth creamy ice cream sandwiched between two brownie waffles, then dipped in your choice of sprinkles, chocolate chips, nuts or other toppings.

Equipment

  • waffle iron

Ingredients 

  • 2 pints O Organics Ice Cream
  • 1 box brownie mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1/3 cup water
  • 1/4 cup sprinkles
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped nuts

Instructions 

  • Preheat waffle iron. Place toppings (sprinkles, chocolate chips and nuts) onto small plates, set aside.
  • Prepare brownie batter according to package instructions, using one additional egg than is called for.
  • Brush waffle iron with vegetable oil or spray. You may need to do this before each waffle is made, to avoid sticking. Pour batter into waffle maker and bake for 3-5 minutes. Repeat until all batter is used.
  • When waffles are cool, break each one apart into 4 pieces. Place one scoop of ice cream on one piece of brownie waffle. Use a spoon to spread the ice cream into an even layer. Top with a second piece of brownie waffle. If desired, dip the sides of ice cream sandwich into toppings of choice. Immediately place onto a tray in the freezer. Freeze sandwiches for at least two hours, or until firm. If storing longer, wrap in plastic wrap and store in a freezer bag until ready to eat, to avoid them picking up freezer taste.

  1. What size brownie mix did you use? Did you use the small box meant for an 8×8 pan, or did you use the family size box meant for a 13×9 pan?
