This Gingerbread Irish Mule is a holiday twist on a classic cocktail. Gingerbread spice syrup is mixed with whiskey and ginger beer for a festive drink to enjoy all holiday season.

What is an Irish Mule?

An Irish Mule is a twist on a Moscow Mule – but uses whiskey instead of vodka. I have several versions of the Irish Mule on my site, including the classic Irish Mule, an Apple Cider Irish Mule and a Cranberry Irish Mule.

However, to celebrate the season, I decided to go in a new flavor direction. The spices and flavors of gingerbread go so well with whiskey and ginger beer that it was a perfect fit.

How to make a Gingerbread Irish Mule

For Gingerbread Syrup

  • 1 cup water
  • 1 cup brown sugar
  • 1 tablespoon molassas
  • 2 inch piece of ginger peeled and sliced
  • 3 cinnamon sticks
  • 1 whole nutmeg
  • 2 teaspoons whole cloves
  • 2 teaspoons whole allspice
  1. Mix ingredients together in a saucepan and bring to a simmer over medium high heat, stirring to dissolve the sugar.
  2. When mixture is simmering, reduce heat and simmer on low for 20 minutes. After 20 minutes, turn off heat and allow to steep for about an hour.

To make Gingerbread Irish Mule

  • 2 ounces Whiskey
  • 6 ounces ginger beer
  • 1/2 ounce gingerbread syrup
  • Fill a copper mug with ice. Add whiskey, ginger beer and gingerbread syrup. Gently stir to mix, garnish with candied ginger if desired.

Ingredients 

For Gingerbread Syrup

  • 1 cup water
  • 1 cup brown sugar
  • 1 tablespoon molassas
  • 2 inch piece of ginger peeled and sliced

  • 2 teaspoons whole cloves

For Gingerbread Irish Mule

  • 6 ounces ginger beer
  • 1/2 ounce gingerbread syrup

Instructions 

To make Gingerbread Syrup

  • Combine all ingredients in a saucepan and bring to a simmer over medium high heat, stirring to dissolve the sugar.
  • When mixture is simmering, reduce heat and simmer on low for 20 minutes. After 20 minutes, turn off heat and allow to steep for about an hour.
  • Strain through a fine mesh sieve to remove solids, store in a sealed container in the fridge.

To make Gingerbread Irish Mule

  • Fill a copper mug with ice. Add whiskey, ginger beer and gingerbread syrup. Gently stir to mix, garnish with candied ginger if desired.
