I created this entirely vegan milkshake using Open Nature Dairy Free Coconut Ice Cream, O Organics Almond milk and Open Nature Cashew Butter. And I was super excited that I was able to create a vegan “caramel” out of the cashew butter, coconut oil and maple syrup! Who knew that was possible? I also used a dairy free whipped cream to top it off, so this was every bit as cold, sweet and creamy as a regular dairy shake.

Coconut Cashew Vegan Milkshake
Ingredients
- 1/2 cup coconut ice cream
- 1/4 cup unsweetened vanilla almond milk
- 1/4 tsp vanilla extract
- 1 TBSP cashew butter
- pinch sea salt
- 2 tbsp Dairy Free Whipped Cream optional, for topping
Vegan Cashew Caramel Sauce
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1 TBSP cashew butter
- pinch sea salt
Instructions
Make the Vegan Cashew Caramel
- Microwave the maple syrup and coconut oil together for 30-60 seconds, or until coconut oil is melted
- Add the cashew butter and salt, whisk together until smooth.
Make the milkshake
- Add the coconut ice cream, almond milk, cashew butter, vanilla extract and salt to a blender.
- Blend until smooth. Pour into a glass and top with vegan whipped cream and vegan cashew caramel sauce.
