This easy One Pot Pasta Bake with Sausage and Wine only uses one pan – you don’t even need to boil the noodles! It only takes about ten minutes to prep, then bake it in the oven while you do something else! You won’t believe how easy it is to make this delicious, cheesy pasta dinner!
This is a sponsored post, writen by me on behalf of Fred Meyer for the #TasteofItaly. Opinions, as always, are all my own! Thank you for supporting the brands that support Fox and Briar! For more information, see my disclosure policy.
You guys, I have to tell you. This One Pot Pasta Bake with Sausage and Wine is life changing. I mean, don’t let me oversell it. But, you basically just throw everything in the pot – even the uncooked pasta – and bake it. What you end up with is a delicious, rich, meaty, cheesy pasta dish that tastes like you stood over it all day, only you didn’t!
To be honest, I was skeptical about this. The fact that you don’t boil the pasta beforehand seemed odd to me. But it works, it really does!
I was so excited when Fred Meyer asked me to come up with a recipe for their upcoming Taste of Italy event. You may remember I worked with them back in March for their similar event, Taste of Spain. From September 11th-24th, they will be featuring an array of imported Italian products in stores. I got to test out a few of the products ahead of time, and I have to tell you, I am beyond excited for everything to be available in stores! I am doing a series of recipes, this is the first one, and I will be bringing another recipe to you later this week!
I’m always looking for easy but delicious dinner recipes. I can’t be the only one, right? I love this One Pot Pasta Bake with Sausage and Wine because it is hearty and satisfying, perfect for the coming cooler weather. The wine adds a nice depth of flavor to the sauce. But baked pasta dishes are sometimes more work than you expect. First boil the pasta, drain it, make the sauce, then pour everything into yet another dish to make it in… The amount of dirty dishes alone are enough to make you want to throw in the towel and order a pizza! This one is all made in one skillet or pot, and takes 10 minutes of hands-on time to prepare! It does need to bake for about 50 minutes, but while it bakes you can do something else with your time. Pour yourself a glass of wine and turn on your Italian Dinner Party playlist while the oven does the work for you.
I hope you enjoy this One Pot Pasta Bake with Sausage and Wine as much as I did. Now what are you going to do with the extra time you have on your hands?

such an amazing recipe! I used a dutch oven and subbed jar sauce for 28 ounces of peeled tomatoes and water for a
splash of chicken stock!!

What kind of wine did you use?
Meghan says
Hi Adrienne – I used a Chianti but any dry red wine would do.

Hi Meghan, I tried the version of One Pot Pasta Bake last week it was yummy. Totally agree wine adds a nice depth of flavor to the sauce, proved. Thanks for recipe.
Meghan says
Thanks James! I’m so glad you enjoyed it!
Mita says
Can red wine be substituted with white wine? That’s what I have on hand. And in fact it’s cooking white wine. I hear chefs saying that we should use wine for cooking that we would want to drink out of a glass. I have never cooked with wine before, hence the silly question.
Meghan says
Hi Mita, I haven’t tried it, but I think white wine would be fine. However cooking wine sometimes has salt in it, so it might change the flavor of the dish, and I would wait to season until the end so you can season to taste or the dish might be too salty. Otherwise you can omit the wine and just use water. I hope that helps!
L says
What size skillet did you use? I imagine that might make a difference in cooking time?
Meghan says
Hi L! I used a 3 quart saucepan (one that has high sides). It was the perfect size to hold the ingredients. I don’t think the size of the pot will make a huge impact on the cooking time, but if you use something larger and more shallow the liquid may evaporate faster. I know another reader made the recipe in a larger 5 or 6 quart dutch oven and the cooking time was the same. I hope that helps!

I made a version of this tonight and it was a hit! We are vegetarian, so I substituted veggie ground beef for the Italian sausage and it came out great. The first thing my husband said when he tried it is “This is really good!” And our almost 3 year old daughter asked for seconds! During the last 5 minutes while it was baking with the mozzarella, I steamed some green beans. Super easy meal and a big success!
Meghan says
Kim, I am so happy to hear that! And I am so glad you were easily able to adapt it to vegetarian! Thanks for taking the time to comment and let me know that you loved it!
James says
If not using wine, would you just use more water instead?
Meghan says
HI James, I haven’t tried that, but I think it would be fine. Thank you!

YAY for not having to boil the pasta first! Sounds incredible Megan, so good for cold winter nights like we are having around here in Melbourne at the moment. Love that stretchy mozzarella topping too <3
Meghan says
Thank you Claudia! Yes, it is so perfect for cold weather! It is still pretty warm here, but those cold months are coming 🙂

I am imagining a Fall full of dishes exactly like this one. I can’t wait to break out my sweaters and use my oven again. I haven’t tried that brand of sauce, will keep my eyes open for it.
Meghan says
Thanks Christine! I am starting to look forward to sweater weather myself. The sauce is part of the Taste of Italy event, if you have a Kroger family store in your area they will have it in September 🙂

I too was skeptical about the one pot pasta thing. After doing some experimenting, I was sold. Yours looks fab! It’s dark and gloomy and rainy here (making this Monday extra wonderful!), and I totally could curl up with the entire pan of this right now. Srsly.
Meghan says
Haha, isn’t it amazing Natasha! This dish is so perfect for cold weather, I will probably be making it all winter 🙂
Allyson says
Oh, this does look tasty. I might sub out the sausage for eggplant and mushrooms. This also looks like it would solve the perennial problem of noodles falling apart after being baked.
Meghan says
I love the idea of using eggplants and mushrooms Allyson, we will have to try that! Thanks so much!
Dawn @ Girl Heart Food says
This looks amaze balls, Meghan!! And 10 minutes prep? Throw it in the oven and you get this? Um, YES please. I need this recipe in my life and I’m totally making this soon. I love recipes that use minimal dishes so there’s less clean up. What am I going to do with all that saved time? I like your suggestion of pouring myself a glass of vino and putting on some music. Sold 😉 ! Pinned! Have a great week, my friend 🙂
Meghan says
Dawn, you are the sweetest! Thank you! And really, who needs extra dishes to do!?! I sure don’t 🙂
