This Sausage, Peppers and Onions Sheet Pan Dinner is one of my favorite quick and easy weeknight dinners.  With only a few minutes of prep time, you can get dinner on the table in about 20 minutes!

Sausage, Peppers and Onions Sheet Pan Dinner

We all need easy dinners sometimes, and this sausage and peppers sheet pan dinner is on that I rely on again and again.  Other than slicing up a few onions and bell peppers, there is almost no prep work.  And since everything bakes on one sheet pan, the cleanup is very minimal. I usually line my sheet pan with foil so I don’t even have to wash any dishes! This is a great dinner for those nights you just don’t have time to cook.

How to make Sausage and Peppers in the oven

This recipe is so easy.  All you have to do is slice up some bell peppers and onions, toss them in olive oil, salt and pepper, then toss them on a sheet pan. Add some sausages, bake for 15-20 minutes.  Aaaand done. You can serve these with some hoagie rolls to make a sandwich or just serve as is.

Quick and Easy Sausage sheet pan dinner!

Ingredients 

  • 1 large sweet onion sliced
  • 2 bell peppers I used red and green, you can use any color.
  • 2 TBSP olive oil
  • 4 chicken sausages I used precooked sausages
  • salt
  • pepper

Instructions 

  • Preheat oven to 400 degrees F. Line a sheet pan with foil for easy cleanup (optional).
  • Slice onion and bell peppers. Add to a sheet pan, toss with the olive oil, season with salt and pepper to taste.
  • Push peppers and onions to the edges of the sheet pan, making space in the middle for the sausages, then place sausages on sheet pan.
  • Roast for 15-20 minutes, or until vegetables are soft and sausages are browned.

Notes

This will work with uncooked or cooked sausages.  If sausages are precooked, they will dry out faster, so don't overcook.  If using raw sausages, make sure they are cooked through before removing from oven.
