Yes, that’s right everyone.  You are seeing a non-alcoholic beverage posted here on Fox and Briar.  Don’t get me wrong, you all know I love a good cocktail as much as the next girl – like this Lavender Collins or this Spanish Gin Tonic.  But sometimes you might need a good alcohol free drink for the kids in your life, the pregnant ladies who really just want a cocktail, or the person who just prefers not to drink booze.  And so I bring to you – the Sparkling Cherry Limeade.  Using just 4 simple ingredients, this will keep everyone happy.  Oh, and feel free to spike it if you feel like it, I won’t be mad.

You know that summer is really here when you start seeing cherries show up in the market.  These bright little jewels grow really well here in the Pacific Northwest, so it is always a treat when they are in season.  I grabbed a bag when I was doing my weekly shopping trip at Fred Meyer and decided to use some of them for this fun mocktail.  I noticed that lots of Sparkling Cherry Limeade recipes use processed ingredients like lemon-lime soda and maraschino cherries.  I generally prefer to keep those things out of my kitchen most of the time, so I wanted to create a recipe that used more simple ingredients.

I also love that these can be made individually so that they can be customized to everyone’s tastes.  If someone likes their drinks sweeter, add more syrup, or if they want to keep the calories low, add less syrup and lime juice, to make it more of a flavored sparkling water.  Of course I’m sure you could throw everything in a pitcher if you are serving a crowd and don’t want to make a bunch of individual drinks.  Or better yet, make everyone make their OWN drinks – one less thing for you to do. What is your favorite way to use cherries in the summer?

Ingredients

  • 1 pound cherries pitted and sliced in half
  • 3/4 -1 cup sugar*
  • 3/4 cup fresh lime juice
  • lime wedges for garnishing
  • sparkling water

Instructions

  • Add the cherries, sugar and 3/4-1 cup of water (use the same amount of water as sugar) to a sauce pan. Simmer on low heat for 20 minutes, stirring to make sure that sugar fully dissolves. Remove from heat but don't strain the syrup, leave the cherries in there. Allow syrup to cool.
  • To make one drink, fill a glass with ice. Add 3-4 tablespoons of cherry syrup and 6 or 7 of the cherries from the syrup. Add 2 tablespoons of lime juice, op with sparkling water. Gently stir to combing, garnish with lime wedges.

Notes

*I don't like my drinks to be overly sweet, so I used 3/4 cup of sugar. If you prefer your drinks to be a little sweeter, use 1 cup of sugar.

    My absolute favorite way to use cherries is to eat them by the bowlful, but this looks like another excellent way to consume them. The color is so vibrant in these I almost can’t believe it’s natural. They look lovely.

    These look so preeeeety, Meghan!! That colour! And I swear, anything served in mason glasses just makes it look so much more tempting. What a great way to use what’s in season and I love that everyone can control the sweetness to their preference. I prefer things on the less sweet side so I ‘d add less sugar. Pinning, of course.
