I never used to be a wing person, but for some reason I always feel the urge to make them when football is on.  I am also not really a football person.  You would think that would mean that I would have no interest in making wings and watching football, but for some reason when they are together it just works.  I actually mostly love football parties for the food, to be honest.  I have tried MANY wing recipes and I am always just a little disappointed with them.  That is, until I made these wings.  These Sriracha Brown Sugar Baked Wings.  They are sweet and sticky and spicy and tangy and DELICIOUS.  Your fingers will be covered in sauce and YOU WILL NOT be able to stop yourself from licking it off, I’m telling you.

I picked these babies up at my favorite Fred Meyer, and they were SO GOOD.  I normally buy the “party wings”, which are already cut to separate the drumette and the wing mid section.  This is the first time I bought whole chicken wings and I don’t think I’m ever going back.  I don’t know if these wings were particularly large, but they had more meat on them then I have seen before and after baking they were the most tender and succulent chicken wings I have ever had.  Also I kind of feel like the whole wing is more of a show stopper and will wow and amaze your guests. 🙂

The key to getting crispy baked wings is a simple one.  Bake on a rack so that the fat that renders falls away from the chicken and allows it to crisp up.  I also put them in a cold oven and then turned on the heat.  I don’t really know if that makes a huge difference but it does allow more fat to render.

After getting all brown and crispy in the oven, the wings get dunked in the sriracha brown sugar glaze and then go back in the oven for about ten more minutes.  The glaze is AMAZING.  Seriously.  If you are the kind of person that doesn’t really like sweet and savory things (who are you??), I dare you to still try this.  Despite the fact that brown sugar is in the name, these are not super sweet.  They are the perfect balance really.  A little sweet from the brown sugar.  A little spicy from the sriracha.  A little tangy from the rice vinegar.  And the fish sauce.  If you are afraid of fish sauce, don’t be.  It will give an umami flavor that you can’t get anywhere else, and don’t worry!  It doesn’t taste fishy at all.  Lastly, the ginger gives a fragrant kick.

After baking, brush more glaze on the wings and serve with some glaze on the side as a dipping sauce for those people who like things really saucy.

  1. Going to have to buy a new keyboard because I just drooled all over it. Haha, forreal though these are amazing! I haven’t had wings in ages and I think it’s time I made them at home again. Pinning!

  2. I never would have thought to combine sriracha and brown sugar but I love that idea! I can’t resist wings and these look perfect for game day or any other day of the week. Have a great weekend, Meghan!

  3. I had never thought of baking them on a rack, that is genius – ultimate crispiness without being fried! I haven’t been much a wings fan in the past either (never quite enough meat on them haha!), but who knows – your recipe might convert me! Gorgeous sounding marinade too 🙂

    1. I always thought that wings weren’t meaty enough as well, Claudia. I don’t know if I just got some super meaty ones, but these were very meaty! I think the whole chicken wing makes a difference. Thanks so much!

  4. I feel the same about chicken wings, I tried a few recipes and they were ok but I was always a bit dissapointed because I had always expected more. If you say this is so much better than the rest, than I have to give them a try. 🙂

  5. I’m with you . . I was never really a wings person until I made an Asian flavored version, which I fell in love with. . and yes! I’m all about the food. . it depends on who’s playing and this year, honestly after the Packers were out, I stopped paying attention. . bring on the sriracha-brown-sugar-baked-wings!!! I want these for Super Bowl Sunday!

    1. Thank you Alice! I think asian flavored wings are supreme. My husband isn’t excited about wither team this yeat either, so we might not even be watching it, but wings for everyone!

  6. My husband is CONSTANTLY asking me to make wings during football season … and yet I never do. Whoops!! haha so bad! He would LOVE these!

  7. Oh my god! I totally have a craving for wings right now, and that never happens. Mostly because I don’t watch football or other manly television that warrants greasy finger food. But, these wings look to good to resist.

I am a wing person, and I do like watching football (but only my teams), so you can bet your @$$ I am drooling over these wings! Sriracha makes my heart sing, but sriracha AND brown sugar… ON wings?!? Staaap it! OMG, SO much YUMMMMMMM! I need an entire platter of these bad boys. TO MYSELF! Pinned! Cheers, doll! <3

    1. Haha, thank you Cheyanne! There is a very strong possibility that I could polish off a whole pan of these! Thank you for pinning!

  9. These wings look SO good, Meghan! My husband is a huge wing man and we go crazy with anything with sriracha! Love the brown sugar in the glaze too!

Sweet and savory is my very favorite. These wings look amazing. I love how meaty they are. Absolutely pinning them to try later!

  11. I love the game for the food too…and the commercials! The game, is just not that important to me. These wings, well these look like they’d get all my attention! Yum!!!

  12. I bought the whole chicken wings for the first time recently and was terrified with the whole cutting them in half process. I should have just done this, yours look amazing!

    1. Thanks Katy! I think they look kind of cool full sized, plus anything that saves me from cutting or chopping is great 🙂

  13. Ooooh, nom! I’ll eat anything with brown sugar and sriracha. Well, okay… except wings since I don’t eat meat…. but I’m gonna put this on some fish or tofu and I can’t stinking wait!!! 😀 I’m the same way with football – I don’t really have much interest, but with the right snacks and the right crowd it’s suddenly enjoyable.

    1. Thank you Leslie! I feel like football is more of a social thing, the food and the people make it fun. And I am pretty sure that this glaze would be great on tofu or fish or pretty much anything else!

  14. Pfew these look perfect 🙂 Looking at the ingredient list I know they are too haha! Nice job over here! I think these could make even the most boring football party worthwile to attend 🙂

    1. Thank you Simon! I was really happy with them, so I’m pretty sure I wouldn’t mind watching football if I had them nearby!

  15. I am fortunate enough to be visiting with Meghan, & got to sample these Scrumpdeliouse wings!! They DEFINETELY rocked my world & I am planning to try this recipe as soon as
    possible~~pure art! ⭐️⭐️⭐️⭐️⭐️

  16. Oh my goodness I just love that you put brown sugar in this! I’m sure its not super sweet but sometimes when you add a bit of a pretty sweet ingredient to something savory it just helps bring out the flavor and that caramelization and crispiness you want especially on your wings! My mouth is totally watering at the sight of these! And oh my I really can’t get down with football too. But I like that it is an excuse to make something in the kitchen!

    1. Thank you Linda! I can’t get enough of the sweet and savory combo! And yes, I totally use football as an excuse to cook a punch of food, everyone wins 🙂

Yesterday I saw huge bottles of Sriracha sauce on sale at the grocery store, now I’m going to get it when I go back there as I know exactly what to do with it! These wings are a PERFECT game appetizer, can’t get any better than that!

  18. Football parties are definitely about the food for me! Thank you for these detailed notes on how to make cripsy chicken. As a non-meat eater, it’s s always hard cooking chicken for my husband because I never quite learned how. He would FLIP for these (and it would give me a good excuse to buy a sweet oven rack). That glaze ?

    1. Thanks Annie! You are probably the best wife ever if you make chicken for your hubs even though you are a vegetarian! 🙂
