This easy Blueberry Nectarine Caprese Salad is the epitome of summer. Fresh juicy fruit, creamy mozzarella and a sweet and tangy dressing come together for a simple fruit salad that is cool and refreshing in the summer heat.

There is something about caprese salad that is just so satisfying on a hot summer day. The fact that it is cold, uses seasonal produce and requires zero cooking is probably a big part of it. I love this Blueberry Nectarine Caprese Salad because it is a twist on the traditional caprese salad, and is a little sweeter because it uses in season fruit.

I recently served this at my Fourth of July BBQ and it was a huge hit with my guests, I got so many compliments I decided I had to put it on the blog!

The ingredients for this salad are simple, so as always, it is best to go with the highest quality you can find.

  • Blueberries
  • Nectarines – peaches will work here as well, and so will plums. Just make sure they are ripe.
  • Small Mozzarella balls – I used ciliegine which is the “cherry” size. If you can only find larger mozzarella balls, you can cut them into smaller bite sized pieces. Be sure to drain the extra liquid before adding the cheese to the salad.
  • Fresh Basil – I used a mixture of Thai basil, Italian basil and purple basil. Use whatever fresh basil you can find.

For the dressing

This dressing is simple and highlights the in season fruit with just a little sweet and tangy note.

  • Olive Oil
  • White Balsamic Vinegar OR Champagne Vinegar
  • Honey
  • Salt
  • Pepper

How to Make Blueberry Nectarine Caprese Salad

With just a few steps, this sald is one of the easiest to make.

  • Whisk together dressing, set aside.
  • Dice nectarines, add them to a bowl with blueberries and mozzarella balls. If making ahead, you can pop this in the fridge until ready to serve.
  • When ready to serve add chopped basil and toss with dressing.

Blueberry Nectarine Caprese Salad

Prep 10 minutes
Servings 6 servings

Ingredients 

For dressing

  • 1/4 cup white balsamic or champagne vinegar
  • 1/4 cup olive oil
  • 2 teaspoons honey
  • Salt and freshly ground black pepper to taste

For salad

  • 3-4 ripe nectarines Diced to 1/2 inch pieces, with skin on
  • 1 cup blueberries rinsed and dried
  • 8 ounces small mozzarella balls (ciliegine) drained
  • 1/2 cup loosely packed Thai basil leaves roughly chopped or torn

Instructions 

  • Whisk together vinegar, oil, honey, salt and pepper. Set aside.
  • Toss together blueberries, nectarines,, mozzarella and basil leaves jn a serving bowl.
  • Drizzle vinaigrette over fruit and cheese, toss to coat.

Notes

To make ahead – do not add basil and dressing until ready to serve. Whisk together dressing, set aside.ย  Toss together fruit and cheese, keep in the fridge until ready to serve.ย  Just before serving, chop basil and add to salad, then toss with dressing and serve. Salad is best served the day it is made.ย
