This Easy One Pot Sausage and Rice Skillet is all cooked in one pot on the stovetop.   You can make this healthy and fast dinner for any busy weeknight, and using only one pot makes cleaning up easy!

If you are looking for a quick and healthy weeknight dinner, you came to the right place!  This sausage, peppers and rice casserole is full of flavor, uses pantry staples and the best part?  It’s all cooked in one pot, so cleaning up can be fast and easy too.

I try to keep my pantry stocked with basics like rice, tomato paste, spices and chicken stock because I use them so often to make quick and healthy meals.  And I like to have sausage on hand because I can always make something flavorful for dinner with sausage.  I love al fresco fully cooked chicken sausages because they are so convenient, and healthier than pork sausage.

I wanted to make a truly one pot meal – so even the rice cooks in the pot with the chicken sausage, peppers and onions.  All the flavors meld together and in 25 minutes you have a satisfying meal that your family will love.

What kind of rice should I use for One Pot Sausage and Rice?

For this sausage and rice casserole I used uncooked white jasmine rice.  Some other recipes use quick cooking rice, but that isn’t an ingredient I keep on hand and I wanted to see if regular rice would cook in one pan.  And it does!  I used white rice instead of brown rice because it takes less time.

Do I need to cook the sausage first?

The al fresco sausage I used is pre cooked.  I did brown the sausage in order to build more flavor into the dish. If you are using raw sausage, you should make sure it is cooked through at the browning stage.

Ingredients

  • 4 al fresco roasted garlic fully cooked chicken sausages sliced
  • 2 TBSP Olive oil divided
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 onion diced
  • 4 garlic cloves minced
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp turmeric
  • 1 tsp dried oregano
  • Pinch red pepper flakes
  • 1 cup uncooked white jasmine rice
  • 2 cups low sodium chicken stock
  • 3/4 tsp kosher salt more or less to taste
  • 1 TBSP fresh parsley chopped (optional)

Instructions

  • Add 1 tbsp olive oil to a large saucepan over medium heat.
  • Add sausage slices and brown, 2-3 minutes per side. Remove from pan.
  • Add remaining 1 tbsp olive oil to pan.
  • Add onion and bell peppers, season with salt and pepper. Sauté until soft 5-8 mins.
  • Add tomato paste, garlic, spices and kosher salt. Stir to combine, 30-60 seconds.
  • Add rice and stir to combine. Pour in chicken stock and return sausages to pan.
  • Bring to simmer, then reduce to low heat and cover. Cook for 20-25 minutes, until liquid has evaporated and rice is cooked.
  • Garnish with fresh chopped parsley if desired, serve.

    Do you think this recipe would freeze well? I have everything to make this but a lot going on this week so if it freezes well I can make an portion out for freezer meals.

    This is a staple at my dinner table. However I give it a Latin twist by adding diced pepperoni or chorizo, a can of Goya Pegion peas a big handful of green olives and a packet of Sazon seasoning.

    Quickest weeknight meal I have met yet so far. I used kielbasa and season with Slap Yo Mama Cajun seasonings. I also made some garlicky hari coverts and salad in the side. It was great and I thought I would have some left over…negative! Making this with the chicken sausage and using jollof rice seasoning next time! Great meal!

    Maybe it was just me, but I followed this recipe EXACTLY according to instructions, and the rice was SOOOOOO undercooked I could not eat it. I tried adding a bit more chicken broth and then some of the rice was undercooked and mushy and other rice was still so hard. The tomato paste BURNED to the bottom of the nonstick pan. The entire recipe was a disaster, and I’m a pretty good cook and make more elaborate dishes on a regular basis. I was so excited for this easy one pot meal only to be terribly disappointed and waste a good amount of food, which is really hard to come by these days.

      Hi Jennifer – I’m sorry you had trouble with the recipe. It sounds like your pan might have been too hot if the rice did not cook and the tomato paste burned.

        Use risotto rice we always seem to struggle with any other rice (no idea why something so simple like rice is so difficult to get correct)

    Is it possible to make this without the tomato paste? I have diced canned tomatoes, but no paste. Thanks for your help!

      HI Savannah – The tomato paste adds a really nice flavor, but that should probably be fine. I would throw the diced tomatoes in there just for some extra flavor 🙂

    This is sooo good. I’ve made it three times. It’s a COVID staple recipe now as we “shelter in place”. Basic staple ingredients, easy to make, everyone loves it and the leftovers are just as tasty. Changes I’ve made – add in diced grilled chicken to make it more filling, add some tapatio or Cholula while sautéing sausage and sprinkle Tony Creole seasoning right before I put the lid on and simmer. My family doesn’t like green bell peppers, so I sub in either jalapeño or poblano pepper. Both have been great. I’ve also had to sub long grain rice, when we were out of jasmine. Jasmine was better, but the long grain worked.

    Wow! I absolutely love this recipe! So nice and simple idea of an everyday meal. I would like to try this variation soon 🙂
    And my favorite combination is sausages with stewed cabbage. I sometimes add some canned beans, but they’re optional.
